- Changed the slideshow extension reference from RISE to jupyterlab_rise for Jupyter Lab compatibility. - Updated local environment setup instructions to use `pixi` commands instead of conda.
Based on 2023 notebook, but updated to focus on Pixi with mentions of uv for completeness

Switch to using Pixi for dependency and environment management. Update the README to include installation and usage instructions for Pixi.
