Update Spring Boot and Spring AI dependencies

Update software currency and. package imports:

• Spring Boot to 4.0.2
• Spring AI in contrib/spring-ai to 2.0.0-M2
• Minor import changes due to modular packaging in Boot 4.x

Out-of-scope: update to Jackson 3. Use Jackson BOM
