New notebook showing how to use the output of the SPHEREx mosaic tool

The SPHEREx mosaic tool is scheduled to be released in February 2026. We should create a notebook showing how to use the output.

@afaisst, I'm assigning this to you because Vandana said she talked to you about this notebook and you might be a good one to write it since you're working on the tool. It's not urgent right now. When the tool's release date gets closer we can assess your workload and reassign this to someone else (maybe @jkrick) if you won't have time to do it.
